One of the things that I miss from the States is not getting fresh apple cider in the fall time. I remember when I was small and we lived in California, my parents took us to a Pumpkin farm that was nearby. There I had my first real taste of apple cider. I grew up mostly in Japan, so I had forgotten about things that you do stateside in the fall time. Then after I got married, we visited my mother-in-law and went to a really awesome apple orchard in her city. I ate myself sick with apples with caramel dip and, of course, apple cider. Now we're back in Okinawa, so I had to improvise and make some myself. :)
The recipe for this is pretty easy. To 4 cups (pretty much the entire carton) of apple juice, I added 1/4 tsp each of cloves, cinnamon, and nutmeg, a tbsp of brown sugar and a pinch of allspice. I've used orange peel before, but I don't think it makes that much of a difference.
I used Japanese apple juice as it actually tastes like real apples to me, whereas generally American apple juice tastes like apple water. It's just a personal preference. Anyway, I used the apple juice pictured below (bought from San-A), but I've also used the Japanese Tropicana "home-made" brand with excellent results. Happy drinking! :)
